Mexican Corn on the Cob

Everybody loves grilled corn on the cob! Mexican corn on the cob, or elote, it is a delicious treat that is easy to make and, thanks to this healthy recipe, good for you. This version replaces the standard sour cream and mayonnaise mixture with Greek yogurt. You be the judge. This recipe is just as delicious, and totally guilt free. Enjoy!

Serves 4

Total Time: 25 Minutes

Prep Time: 10 Minutes

Cook Time: 15 Minutes

Ingredients

 

4 ears of corn, husked

1/2 cup of Greek yogurt

1/2 cup crumbled cotija cheese or grated Parmesan cheese

1 teaspoon chili powder

1/4 cup chopped fresh cilantro (optional)

1 lime, cut into wedges

Salt and pepper to taste

Instructions

 

Preheat your grill to medium-high heat.

Place the husked corn directly on the grill. Grill, turning occasionally, until the corn is tender and lightly charred, about 10-15 minutes.

While the corn is grilling, put the Greek yogurt in a small bowl. In another bowl, combine the crumbled cotija cheese or grated Parmesan cheese with chili powder.

Once the corn is cooked, remove it from the grill. Using a brush or spoon, coat each ear of corn with the yogurt. Sprinkle the cheese and chili powder mixture generously over the corn. 

Sprinkle chopped cilantro over the corn (if using). Squeeze lime wedges over the corn and season with salt and pepper to taste.

Serve your Mexican Grilled Corn on the Cob immediately while hot. Enjoy!
